Cedric Grolet Wants to “Conquer the United States”

Cédric Grolet’s trompe l’oeil fruit pastries were on sale in New York City from Friday, April 5 to Sunday, April 7 in Dominique Ansel Bakery in SoHo. Invited by fellow French-born chef Dominique Ansel to share his innovation creations, Grolet, the pastry chef at Le Meurice in Paris, said he hopes “conquer the United States and New York.” He dreams of “opening a shop around the fruit [pastries].”

Ansel and Grolet met 14 years ago at Fauchon in Paris, when the Ansel hired Grolet to work in the kitchen. “He found his path, his way, and he showed everyone his talent,” said Ansel, who was “sure it will work” for his friend in the United States.
