How to Make Perfect French Macarons

Ah, le macaron. The very epitome of French ingenuity, tradition, and perfectionism. An old favorite as a matter of taste, and a recent one in pastry shops internationally thanks to its status as a naturally gluten-free dessert.

But there’s one more reason to love these little almond paste miracles. They’re also a favorite kosher dessert! So whether you’re celebrating Passover or Easter this weekend, if it’s you signed up to bring a dessert to the family dinner, this is the recipe for you. Sarah Abitan, founder of the French pastry shop Gat’Ô, will show you how to make flawless macarons in this video. All you’ll need is almond flour, egg whites, confectioners sugar, and sugar, in order to make what the French call, ironically enough, meringue italienne.

Sarah even shows you how to make a macaron cake, if a kosher or gluten-free birthday cake is sorely needed. But it would probably make an excellent birthday gift for any of your closest Francophiles. So pick a filling, grab that mixer, and get cracking (eggs, that is). Those macarons aren’t going to bake themselves.
