For a long time, it was impossible to find calissons outside of France. French pastry Gilles Cailleaux chef grew sick of his endless search for calissons. He took fate into his own hands, in Los Angeles, California. There, he began cooking delicious authentic French calissons, with natural ingredients and a high almond content (40-45%). And so began his brand Calissons by Gilles.
